Biography

Nuria Salazar (PhD) is researcher in the group Diet, Microbiota and Health from the Institute of Health Research from the Principality of Asturias (ISPA) and she works at the Dairy Research Institute of Asturias (IPLA-CSIC). Her PhD thesis focused on the potential prebiotic role of exopolysaccharides isolated from intestinal and dairy origin Bifidobacteria. After her PhD, she worked as a postdoctoral researcher at the Metabolism and Nutrition Research Group at the UCL, Brussels where she studied the impact of prebiotics on the gut microbiota in the context of obesity and other metabolic disorders. Her current research interests include functional foods with emphasis on nutrition/health aspects of dairy foods and dietary modulation of the gut microbiota of targeted populations like elderly or obese people. She is the author or co-author of over 50 peer-reviewed publications, several book chapters and monographs.
